Creating Value from Agricultural By-Products
This innovation represents an important step toward sustainable utilization of agricultural by-products from the coffee industry. By transforming coffee cherry peels, which are often considered waste, into a novel semi-dried candied snack product, the research not only helps reduce agricultural waste but also creates significant added value from underutilized materials.
The technology has strong potential for commercial development and can contribute to generating additional income for coffee farmers and community-based enterprises. Furthermore, it supports sustainable production and consumption practices while promoting the circular economy through the efficient use of agricultural resources.
The achievement reflects the commitment of the Faculty of Agro-Industry, Chiang Mai University, to advancing research and innovation that create tangible benefits for society, industry, and sustainable development.
