COCOFIBER: A New Ingredient for Reducing Oil Absorption and Increasing Crispiness in Fried Coating Products
Fried coating products are a popular type of processed food among Thai people due to their appealing taste and texture, which are highly favored by consumers. However, consuming fried food in large amounts can negatively impact health. Therefore, there is a need to find ways to reduce the fat content in fried food products, as well as to enhance their nutritional value. A promising approach to reducing oil uptake in fried products without compromising their sensory attributes is the incorporation of dietary fiber into batter and breader formulations. COCOFIBER is a coconut-derived ingredient containing over 65% dietary fiber, specifically developed fried coating products. It can be used to enhance crispiness and reduce oil absorption.
